A delicious plate of pumpkin scones, made using pumpkin powder so you can always have some on hand. A fantastic treat packed full of sweet healthy pumpkin.

INGREDIENTS
1/2 cup Pumpkin Powder
170 ml Warm Water
1/4 cup Caster Sugar
2 & 1/2 cups Self Raising Flour
40 grams Softened (not melted) Unsalted Butter
1 whole Egg
1/3 cup Milk plus a little extra to brush the top of scones
METHOD
The Meaty Part
Preheat oven to 230 Degrees Celsius
In a small bowl mix Pumpkin Powder & Warm Water to create a smooth pumpkin puree & put to one side
Sift Self Raising Flour & Caster Sugar into a large mixing bowl
Rub Softened Butter into flour & sugar mix, then rub in with your fingers until the mix looks like fine crumbs.
Add pumpkin puree, Milk & Egg to the crumby flour mix combine it quickly with a cutlery knife – it will seem pretty wet at first
Dust some flour onto the work surface and tip the dough out
Fold the dough over a few times till it is a bit smoother. Flatten into a sheet about 2cm thick.
Take a 5cm cutter & cut out rounds & place on a greased baking tray
Press what’s left of the dough back into a 2cm sheet and cut out some more scones, repeat till all the dough is into rounds
Brush the tops of the scones with a little Milk
Place in a preheated oven and bake for 12 - 14 minutes until scones are risen & golden brown.
Serve with Softened Butter, Cream, or your favorite Jam
