Corn fritters are a classic and this is our recipe that we have used for years. Feel free to add seasonings to your tastes or change flour to suit dietary requirements. This recipe make about 10 medium size fritters.
Ingredients
1 cup self raising flour
1/2 tsp salt
2 eggs
1/2 cup milk
2 tsp butter
2 cups freeze dried corn kernels (or other filling as desired)
Place 2 cups of freeze dried corn kernels and 4 cups of water in a saucepan and bring to a simmer.
Meanwhile, soften butter and add milk and eggs, whisk to combine.
Add salt and flour to the wet mix and stir until combined.
When corn kernels are soft and plump drain excess water and add to batter mix, stir to combine.
Heat preferred oil in a frying pan and add fritter batter to desired size.
When bubbles appear on the top and stay open flip the fritters carefully to cook on the other side.
When golden and crunchy remove from pan and enjoy as they are or with your favourite condiment.
