Credit for this recipe goes to our teenage son, he loves to make this and have it on its own or with one of our family favourite curries, including Butter Chicken.
We hope you enjoy this coconut rice recipe using coconut milk powder as much as he does.
Feel free to add any spices you enjoy such as a few cardamon pods, turmeric, garlic or cumin seeds.
Ingredients
1 cup basmati rice
1/2 cup coconut milk powder
1 1/4 hot cups water
1/4 tsp salt
1 Tbsp white sugar
1 Tbsp coconut oil, either the solid kind or fractionated (liquid)
1/4 cup desiccated/shredded coconut (optional)
Instructions
Rinse rice under cold water until water runs clear then add to rice cooker bowl.
In a separate bowl combine hot water, coconut milk powder, salt, sugar, oil and coconut, stir or whisk until coconut powder is dissolved.
Add water mixture to rice cooker bowl and stir to combine.
Turn rice cooker on
Once finished give a light stir and let sit for 5-10 minutes, then serve.
